Total Time: 55 minutes

Servings: 4 servings

Ingredients

  • 1.5 pounds red potatoes, cut into bite sized pieces

  • 12 ounces large broccoli florets

  • 2 Tablespoons olive oil

  • ½ teaspoon creole seasoning

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

For the kielbasa:

  • 2 Tablespoons honey

  • 1 Tablespoon olive oil

  • 1 Tablespoon stone ground mustard

  • 2 cloves garlic, minced

  • ½ teaspoon creole seasoning

  • 2 (12 ounce) packages pork kielbasa, cut into 2-inch pieces (1.5 pounds)

Instructions

  • Preheat the oven to 400°F. Spray a large sheet tray with cooking spray and set aside.

  • Place red potatoes, cut into bite sized pieces and broccoli florets onto the sheet tray. Drizzle with olive oil and add creole seasoning, garlic powder, and onion powder toss so the veggies are coated.

  • In a large bowl, whisk together honey, olive oil, stone ground mustard, minced garlic and creole seasoning.

  • Add pork kielbasa to the bowl and toss with the sauce until coated.

  • Move the veggies over so you can add the kielbasa to the sheet tray. Pour any remaining sauce over the sausage.

  • Bake for about 35-40 minutes, tossing the veggies every 10 minutes until the kielbasa is charred and the potatoes are tender. Serve immediately.
