Crispy Air Fryer Chicken Parmesan: Guilt-Free Gourmet


Experience the deliciousness of my Crispy Air Fryer Chicken Parmesan, a guilt-free gourmet delight. This healthier take on the classic dish features juicy chicken breasts coated in a crunchy, golden crust, topped with marinara sauce and melted mozzarella cheese. Made effortlessly in the air fryer, it's a quick and satisfying meal perfect for any night of the week!


Ingredients:

  • 2 chicken breast, cut into tenders

  • salt and pepper for seasoning

  • ¼ cup flour

  • 2 eggs, beaten


Breading Mixture:

  • ¼ cup panko bread crumbs

  • ¼ cup bread crumbs

  • ¼ cup grated pecorino or parmesan cheese

  • 1 Tbs Italian seasoning

  • ¼ teaspoon salt


Spaghetti and sauce:

  • 1 can tomato sauce

  • 1/2 can of crushed tomatoes

  • 1tsp garlic powder

  • 1tsp onion powder

  • 1tsp oregano

  • 1lb spaghetti


Instructions:


Air Fryer:

  1. Preheat air fryer to 400° or 390° (depending on your air fryer). A few minutes is really all it takes.  

  2. Season chicken lightly on both sides with salt and pepper. 

  3. Make a breading station with 3 bowls - the first for the flour, the second for your beaten eggs and in the third, you'll mix together the panko, bread crumbs, parmesan cheese, Italian seasoning, ¼ teaspoon of salt and pepper, to taste. 

  4. Give a light spray of olive oil or coconut oil cooking spray to the bottom of your air fryer basket. 

  5. Dredge your chicken piece by piece first in the flour (shaking off any excess), then the egg, then the breading and place in your air fryer basket. Repeat until basket is full and then lightly spray the tops of the chicken with olive oil cooking spray, you may need to do 2-3 batches depending on the size of your air fryer. Cook between 20-30 minutes depending on thickness - until temperature reaches 165 degrees.

  6. Sprinkle on some mozzarella to melt and finish off the chicken

Sauce:

  1. While the first batch of chicken is cooking simmer tomato sauce and crushed tomatoes in a pot on the stove. Add in the seasoning

  2. Continue to simmer on low while the remainder of the dinner cooks


Spaghetti:

  1. Bring a pot of salted water to boil

  2. Cook spaghetti according to package or al dente

  3. Drain and add to bowl, mix with sauce. Make sure to leave enough sauce to drizzle over chicken


Plating:

  1. Place a serving of the spaghetti first on the plate

  2. Add chicken

  3. Drizzle some of the sauce on top of the chicken and add more cheese

  4. Serve and enjoy!!
