Comfort Duo: Savory Meatloaf & Creamy Scalloped Potatoes!

Ingredients (meatloaf):

  • 1 lb. lean ground beef

  • 1/3 cup breadcrumbs

  • 1 egg

  • 3/4 cup milk

  • 1 tbls Worcestershire Sauce

  • ½ teaspoon salt

  • 1 Pinch black pepper

  • 1/3 cup Ketchup

  • 3 tbls Mustard

  • 3 tbls Brown Sugar


Instructions (meatloaf):

  1. Preheat the oven to 400℉.

  2. Mix the ground beef with breadcrumbs, egg, milk, Worcestershire sauce salt, and pepper. Divide the meat mixture into 4 portions and shape each into a football shape about ¾-inch thick. Set aside. 

  3. In a bowl mix ketchup, mustard, and brown sugar until combined

  4. Cover the top of each meatloaf with ketchup mixture

  5. Place the meatloaves on the pan and spread the remaining BBQ sauce over each one. 

  6. Place the baking sheet to the oven and bake for an 25-30 minutes or until an instant-read thermometer inserted into the thickest part of the meatloaves registers 165℉.


Ingredients (scalloped potatoes):

  • 4 cups thinly sliced potatoes

  • 3 tablespoons butter

  • 3 tablespoons flour

  • 1 1/2 cups milk

  • 1 teaspoon salt

  • 1 dash cayenne pepper

  • 1 cup grated sharp cheddar cheese

  • 1/2 cup grated cheese, to sprinkle on top

  • Paprika, for garnish (optional)

Instructions (scalloped potatoes):

  1. Preheat your oven to 350°F, Lightly grease a one-quart casserole dish to prevent sticking

  2. In a small saucepan, melt the butter over medium heat. Once melted, blend in the flour and let it sit for a minute to cook out the raw flour taste

  3. Gradually add all of the cold milk, stirring constantly with a whisk to prevent lumps. Season with salt and a dash of cayenne pepper

  4. Cook the sauce on low heat until it becomes smooth and starts to boil, stirring occasionally

  5. Once the sauce is boiling, reduce the heat and stir in 1 cup of grated sharp cheddar cheese until melted and well combined

  6. Place half of the sliced potatoes in the prepared casserole dish

  7. Pour half of the cheese sauce over the potatoes

  8. Repeat with a second layer of potatoes and the remaining cheese sauce

  9. Sprinkle the additional 1/2 cup of grated cheese on top. For a touch of color, you can sprinkle some paprika on top as well.

  10. Bake the scalloped potatoes uncovered in the preheated oven for about 1 hour, or until the top is golden brown and the potatoes are tender when pierced with a fork.
